我住在中国以后,发现你们大天朝的豆奶也选择太太太太太多了吧!无论去到哪里都会有不同牌子不同味道的豆奶。但我却找不到一款合理价格的杏仁奶!在米国,我们会有很~多杏仁奶选择,而且大部分价格都很划算。我的人生离不开杏仁奶吖!所以,我决定要自己做!
Since living in China there are manyy manyyyyy soy milk options. Everywhere I go I can find all different brands with different flavors. BUT I just can’t seem to find a reasonably priced Almond milk! In America we have SO many options for almond milk at really good prices and I just couldn’t take being away from my Almond milk anymore! Thus, I decided to make my own!
这款杏仁奶所需要的材料只有杏仁跟水(不加糖的)!我喜欢带点甜的杏仁奶,所以我加了点枣跟香草精做成“香草口味的杏仁奶”。也可以加入枣跟可可粉,做成“巧克力杏仁奶”。谁能够拒绝这么健康的巧克力奶呢,对吧?!!?
All you need to make almond milk is almonds and water (for unsweetened)! I like my almond milk with a bit of sweetness so I added in some dates and vanilla extract to make “Vanilla flavored milk.” I also decided to make a “Chocolate milk” flavor by adding the dates and some cocoa powder. Who can say no to “healthy chocolate milk” right?!!?

ALSO the almond pulp that’s leftover after you extract all the milk can be used in homemade crackers! (Recipe coming in a few days!) so make sure not to throw it away!! Trust me!!

材料 INGREDIENTS 材料
1杯(112克)生杏仁,提前一天用冷水泡一晚
(或用热水泡1-2小时)
5杯(1200毫升)过滤水
一小撮海盐
1 cup (112 g) raw almonds, soaked overnight in cool water
(or 1-2 hours in very hot water)
5 cups (1200 ml) filtered water
pinch sea salt
可加可不加:5颗去核枣 + 1茶匙 香草精,做成“香草杏仁奶”
optional: 5 dates, pitted + 1 tsp vanilla extract for “vanilla almond milk”
可加可不加:5颗去核枣 + 2茶匙(10克)可可粉,做成“巧克力杏仁奶”
optional: 5 dates, pitted + 2 Tbsp (10 g) cocoa powder for "chocolate milk"
步骤 DIRECTIONS 步骤
STEP 1
把生杏仁提前一天用冷水泡一晚,或用热水泡1-2小时。
Soak almonds in cool water overnight or 1-2 hours in hot water.
STEP 2
把泡好的杏仁,水,盐,枣(如果想要香草或巧克力口味,可以加入香草精或可可粉。)加入搅拌机,搅拌至顺滑的奶油状。持续搅拌至少1-2分钟,让杏仁的精华充分出来。
Add your soaked almonds, water, salt, dates and optional flavors (vanilla extract for “vanilla milk” and cocoa powder for “chocolate milk”) to a blender and blend until creamy and smooth. Keep it running for at least 1-2 minutes so you get the most out of your almonds.
STEP 3
大家用纱布或者用薄的洗碗布来挤杏仁汁。把洗碗布铺在碗上面,把混合物倒在布上面,小心收起几个布角,提起来。然后使劲把里面的液体挤出来。把剩下的杏仁渣扔掉或者留着做烘焙材料(特别是下周推出的饼干食谱会用到喔!)
Strain using a cheese cloth, or you can even just use a thin dish towel. Simply lay a clean dish towel over a mixing bowl, pour over the almond milk, carefully gather the corners, and lift up. Then squeeze until all of the liquid is extracted. Discard pulp, or save for adding to baked goods (especially in crackers which we will share next week!).
STEP 4
把挤出的杏仁奶倒在罐子或者带盖的瓶子里,放进冰箱冷藏。尽管新鲜品尝的味道是最好的,但冷藏的话,还是可以放上几天。喝之前摇一摇,避免分层。
Transfer milk to a jar or covered bottle and refrigerate. Will keep for up to a few days, though best when fresh. Shake well before drinking, as it tends to separate.
